At my Asian market in the suburbs of Boston, I have discovered powdered coconut milk. Tastes as good as canned and has the advantage of portion controlled. Make as much or as little as you like. It keeps and takes up less room on the shelf. I recommend it if you can find it. And I'll definitely try this recipe on fish or chicken breasts.

Preparing per the recipe, this is indeed bland. With the addition of brown sugar, fish sauce, and Thai spices it became wonderful. Will be serving it over shrimp and Jasmine rice.

I have noticed that it's worth checking the percentage of coconut in the ingredients listed on the can. Different brands vary quite surprisingly.

Delicious and quick.
this sauce has become one of my go-tos on a weeknight. I just use a whole onion so theres no leftover bits and a good-quality canned roasted chopped tomato. If I'm making it for guests I'll roast my own tomatoes, but on a weeknight canned works well. We also add lentils to thicken and add a little substance, and just serve with warm naan for dinner.

Very nice, very unusual. A nice balance of sweet, tart, and fiery. I used fresh minced garlic for the sauce this time, but next time I make this (and there will be a next time) I'm going to use the garlic that slow-roasted in with the tomatoes to add a little extra sweetness.

Flavor is too light. Would not bother roasting the tomatoes. Did not seem to add any depth of flavor. Definitely add brown sugar and fish sauce. Also added Garam masala and cumin to make it more like a Thai version of Indian butter sauce.

I like the method but found the sauce quite bland. I ended up adding some smoked salt to bring the roasted taste out more and some garam masala and bhaji masala. That was then delicious!

We made this with (far fewer) confit tomatoes than requested, and boosted it with half a can of tomato paste on some seared barramundi, and then used the rest as an awesome sauce for some orzo the next day with some fennel fronds. So good.

Delicious. Perfect if you are looking for a quick sauce on top of rice or whatever. Let it simmer to thicken a bit. Added roasted chicken and was a great curry like dish. Loved it!

Cooked the onions down a bit longer before adding the ginger and garlic. Also cooked a pound of shrimp in the sauce before adding the lemon and that was a delicious addition.
Yummy as a very thick soup or served over eggs.

Delicious. A very quick meal, and you can even poach fish right in the sauce. I served it over quinoa and with a side of roasted vegetables.

I was having a conversation with my Asian grocery store owner in Eugene Oregon and he suggested always buying canned coconut cream instead of coconut milk because what you are after is just that, coconut cream, not the added water in coconut milk. The water is a waste of money. Adjust the desired thickness of the cream at home with your own water ot thicken even more with corn starch.

The flavor of the roasted tomatoes was indeed mellow, but taking ideas from other reviewers I added fish sauce, cayenne, chili powder, a touch of cumin, dried basil, extra red pepper flakes, double garlic and ginger, and the garlic I roasted along with tomatoes. When serving I added fresh basil and cilantro on top of rice and pan fried cod. The additions made it a little bit spicy, a nice counter to the creaminess of the coconut and mild tomatoes. All loved it, including a visiting toddler.

I reduced the tomatoes by half and served over pan seared fresh snapper. The flavors were fresh and delicate.

I agree that adding fish sauce makes this a bit more special. Also, for those who felt this wasn't worth the production of roasting tomatoes in a ton of olive oil for 2 hours, you can just roast the tomatoes for a shorter amount of time at a higher temperatures to cut down on cooking time,
