Good morning! My family loves milk! We go through 4-5 gallons a week. I have 5 kiddos. So that’s probably why. 😉 We love milk & cereal, a big glass of milk with pb&j, smoothies, milk & cookies, & of course, a big mug of warm hot chocolate on a cool fall morning is the best. I also use milk all the time in baking & cooking as well. Milk is definitely a staple in many, many of our family recipes. We love making homemade muffins & cakes & soups & sauces that all call for milk. One of our favorite family traditions is pound cake crumbled up in a glass with milk poured over it. My mom has the best pound cake recipe. Delicious!

Every year when the temperature cools, my family’s need for comfort foods made with milk always goes way up! Especially with the drop in temperature, the need for something warm, yummy and made with milk always finds it’s way to our menu. 😉 These type of recipes always hit the spot with my family. Annnnd that is even more true this year. We could all use something warm & yummy to distract us from all the craziness going on right now.

Today I am excited to share one of my family’s favorite recipes. This creamy potato soup recipe that calls for milk along with potatoes, cream of chicken soup, onion & cheese, & served in a large bowl topped with more cheese, chopped green onions & bacon bits is the best. It taste like a creamy, melt in your mouth loaded baked potato. Yep! It’s that good! You can make this recipe in the slow cooker or on the stove. It’s one of our family’s favorite comfort foods when the weather cools. It’s delicious! 🙂

Like I mentioned before we drink & use a lot of milk in our family. Dairy is so very important in helping keep our family healthy. Dairy foods contain vitamin A, vitamin D & protein. These nutrients are a must for having a healthy immune system. Annnnd did you know that dairy foods are linked to many other health benefits as well including reducing inflammation & improving your digestive health? Yep, dairy foods are a key ingredient to a healthy diet. You got to drink your milk (or use it in a yummy recipe). 😉

Meal time is my favorite. Having dinner together each night really brings our family together. It’s one of my favorite family traditions. Annnnd more importantly (in my opinion) is the working together in the kitchen preparing the meal before we even sit down to eat. I remember working with my grandparents in the kitchen growing up & favorite recipes I learned from my mom. Such sweet memories! I want to pass on these traditions to my kiddos. This time together in the kitchen really bonds our family & helps create those memories & skills that we will remember forever. In our home one of our traditions is a slow cooker meal each Sunday. I love have a warm meal ready to go. It’s amazing how many times milk is called for & tied to this family tradition. Milk definitely brings our family together as we cook together in the kitchen & bond as a family. Annnnd can I just say how much I love it when I find my kiddos in the kitchen baking or cooking together on their own. It’s the best! 🙂 I love creating family memories together in the kitchen.

Tip: This creamy potato soup can be put together a few hours before dinner & placed in the slow cooker on low & then warmed until time to eat. You can also finish this recipe right on the stove if you’d like. Alright, let me show you how easy this creamy potato soup is to make. Let’s get started! 🙂

First, gather your ingredients. You probably have most of these ingredients on hand in your fridge or pantry. If not, run to Target & grab the ingredients. 😉 You will need:

3 cups 2% milk
12 cups potatoes (peeled & cubed)
4 cups water
2 cups white onion (diced)
2 tsp butter
1 26 oz. can of cream of chicken soup
2 cups shredded mozzarella cheese

toppings: shredded cheese, bacon bits & diced green onions

Rinse & then peel your potatoes. TIP: I love using the large baking potatoes for this recipe. I think the bigger potatoes are easier to peel. 🙂

Then you will cut the potatoes into smaller pieces and put inside a large pot. Add about 4 cups of water (or just enough water to cover your potatoes). Bring to a boil and lower the heat to simmering.

While your potatoes are simmering on the stove, heat a large skillet on medium heat. Add 2 tsp butter, and then sauté your onions until clear. Set aside.

After about 20 minutes your potatoes should be starting to soften just a bit. You want to be able to stick a fork in them easily. Once you can do that, it’s time to move on to the next step.

Add 3 cups 2% milk slowly as you stir. Also, stir in the large can of cream of chicken soup.

Finally, stir in two cups of mozzarella cheese. Stir until cheese is melted.

Carefully pour your soup into a large slow cooker. Cover & cook on low for about 2-3 hours. This will really soften up the potatoes and allow your soup to get smooth and extra creamy. If you’d like to finish cooking on the stove, you can do that too! Just keep stirring until soup is warm & all the ingredients are combined, & the potatoes have finished cooking.

Serve with your favorite baked potato toppings sprinkled on top. We love to use bacon bits, shredded cheese, chopped green onions and sour cream. Oh my yum! This is going to be delicious! 😉

FYI: This recipe feeds 8-10 people, and it can be halved if you don’t need quite as much.
